INGREDIENTS

  • 500 grams of beef, portion of the battered rice
  • 1,500 ml of beef broth
  • 3 tablespoons of cooking oil, for sauteing
  • 1 tablespoon of salt

Puree:

  • 6 cloves of garlic
  • 4 seed beans (take the contents, then soak in water)
  • 5 kaffir lime leaves
  • 8 red chilies
  • 2 galangal thumbs
  • 2 cm ginger
  • 3 cm turmeric
  • 2 cm kencur
  • 1/4 teaspoon cumin
  • 2 tablespoons coriander
  • 1/2 teaspoon pepper grains
  • 4 bay leaves
  • 2 lemongrass stems, bruised
  • 2 tamarind eyes, dissolve with 1 tablespoon of water

Complement:

  • Chili shrimp paste
  • Fish crackers
  • Short bean sprouts
  • Salted duck egg

 

INTRUCTIONS

a. Wash the meat thoroughly, boil until cooked. Remove and drain the meat, then cut into cubes. Set aside meat and broth.

b. Heat the oil, saute the spices until fragrant and cooked. Add meat, lemongrass, orange leaves, tamarind water and salt. Stir until smooth and flavorful.

c. Beat the meat until wide. Fry in hot oil briefly, remove from heat. Sprinkle with fried onions.
